What would you guess to be the number one cause of death in America’s National Parks? If you guessed “idiots who try to take selfies with wild animals,” you would be wrong. Between 2014 and 2022, there’ve been 601 accidental deaths in the National Park system. Of those incidents, just over 36% were due to falls…though a few of those were likely “selfie” related, too. Next on the fatality list were vehicle crashes (21%), drowning (16.3%), environmental issues (weather, floods, avalanches, etc.) (15%), and then wildlife encounters (1%).

Here are eight food trends that Whole Foods is watching for 2027:

Knowing where your food comes from. Shoppers are expected to care more about provenance, looking beyond the country of origin to details like specific regions, farms, and protected designations.
“Beautrition.” Snacks and foods marketed around skin health, hydration, collagen, and other beauty-related benefits are expected to trend upward.
Japanese comfort food. Western-influenced Japanese dishes and ingredients like tonkatsu, curry, milk bread, black sesame, and umami-heavy sauces are expected to keep gaining ground.
Shorter ingredient lists. As concerns grow over additives and ultra-processed foods, shoppers may be seeking out more products made with just a handful of recognizable ingredients.
Familiar foods in unexpected forms. Think cinnamon-roll focaccia, smash-burger tacos, buffalo chicken lasagna, and other recognizable flavors showing up in completely different formats.
Bitter is back. Bitter greens and drinks featuring ingredients like fennel pollen, tarragon, burnt sugar, and licorice root could become more popular, helped in part by the growth of mocktails.
Less food waste. Expect more refillable products, bulk-buy options, and foods or other products that make use of ingredients that might otherwise be thrown away.
Beans everywhere. Beans are moving well beyond the humble can, showing up in pasta, snacks, pizza crusts, instant bowls, and other convenient formats.
Some of these trends are already well underway, especially beans, Japanese flavors, and simpler ingredient lists. Others, like “beautrition,” may need a little more time before we know whether this is an accurate prediction of the future or just a new buzzword.
